Great idea on the patties.. have never seen any one else ever do them that way..And i just bought the pattie maker attachment to get ready for summer.
I've seen Ms. Duke cutting cooking using that technique so I gave it a shot...I would still recommend the pattie maker!!

Was the pork leg frozen before you made the sausage? 

Will you freeze the pork cubes and then make something else and refreeze?

The reason I asked was I made some a few months ago with frozen shoulder, and after making breakfast sausage, eating some, and freezing the rest, the stuff I froze tasted really bad and I ended up throwing it out due to that. Better safe than sorry.

The stuff I ate fresh was good though

The pork leg was fresh when I bought it, I kept it in the fridge overnight before breaking it down. I have frozen the remaining cubed meat until I decide what I want to do with it. I have more than enough breakfast sausage for now!

Had those legs on sale last week at my store also..sold around 300 of them. (also complimentary deboned about 60 for some of my older customers). I ran out so wasn't able to make any sausage for myself.

Was a nice surprise seeing them there. I had just gone in for a few veggies. Very rare seeing large cuts like that at that particular store.

60?! Deboning one was enough for me!
