First smoke on new Smokin-It #3D - SLRibs and CSRs

I picked up my new Smokin-It #3D on a trip back home last weekend, got it seasoned (twice) during the week in preparation of a couple of planned smokes this weekend.  First smoke ever on my #3D is 3 racks of St. Louis Spare Ribs (picked up for $1.99/lb at Costco) and a huge package of Country Style Ribs from the pork shoulder (picked up for $2.69/lb at Costco).  I got them rubbed down and stacked on racks:

 

 

Foiled the smoker box lid and floor of the smoker:

 

 

And loaded up the SLRibs and CSRs, set the temp at 230* with a 5 oz hunk of hickory, got the timer set for 3 hours when I'm going to pull the CSRs and foil them for a couple hours...leaving the SL Ribs to continue cooking.  I'm going to try the no-foil method for the SL Ribs this time (first time for that as well).  And here we go:
 

 

 

 

 

The smoker hasn't even started this morning yet, and I already smell all smokey from the build-up on the walls of the smoker...it's a good day already!

I decided to try to make the CSRs into pork burnt ends (first attempt at this)...sauced up and ready for the bark creation:

And, the finished ribs...no foil didn't do so well since meaty end was REALLY meaty, and the thinner end got really dry. Gonna stick with foiling for now...
