Here we go again! Polish and jalapeño cheese coming up!

Ground up 40 pounds of butt last night and have 20 pounds of venison!

We didn't finish all of the sausage last weekend due to some crazy circumstances, but we'll be back at it mañana!

We plan to make around 30 pounds of polish smoked, and some jalapeño cheese with venison.

So we could have a head start, we ground last night...


20 pounds in the top tub and 21 in the bottom tub... Venison is in the freezer.


Stay tuned for pics, gripes, drinks, and smoking, all weekend long!

Have I mentioned that I LOVE making sausage? :sausage:

There are 3 refrigerators in my garage.

This kid is having a blast!

While 3 of us worked on sausage, another made us some breakfast from last weeks breakfast sausage.


Polish is done and in the MES.

We grilled some of the Polish for lunch. Yeah, it's good!

Jalapeño cheese venison sausage is done and will be put in my big smoker tomorrow.



Needed some moisture

Resting until tomorrow.

Gonna finish with 10 pounds of loose Italian, and then find a beverage!
