Sure. Most prefer a flat grind for slicing brisket, but the hollow grind will work.
If possible, I'd put a VERY steep edge on the blade and I'd cut on a wood cutting board to protect the edge.

Those knifes will hold a razor edge for long period of time,I have arthritis and can no longer use my stones.I did how ever find a sharpener that is great.
