I was prompted to say hello on this new forum. I live in central ny, but grew up in New Jersey. I cook professionally and cook even more as a hobby. By no means do I consider myself a know it all and look forward to gain knowledge from everyone else on this forum.
I currently use a Brinkman offset smoker at home. Cheap and inconsistent but it gets the job done. Like driving a beater for your first car growing up.

Welcome to the board, settle in and look around! I'm running an offset, too. It's like running a steam locomotive. But I love it.

I actually like using the Brinkman. It is more of a challenge with the thin metal and open seams. Good practice and I don't feel guilty modifying it.

Welcome to SMF!

The Brinkman is perfect for learning how to control your temps.

If you can smoke with that you can smoke with any smoker.

Looking forward to seeing it in action.

Good morning and welcome to the forum, from a cloudy and warm day here in East Texas, and the best site on the web. Lots of great people with tons of information on just about  everything.
