I'm on this forum to learn new techniques on smoking meat and recipes. And have a few I can share also. I am a innovator of new styles that clash with my backwoods roots of being a country boy from PA. I love using any smoker to the highest level for full flavor distribution and long smoke times. My choice of wood comes fresh. I harvest all the woods same day as I package and freeze them for the finest of flavors this method is not for the beginner ,but we all learn from trial an error.I have a passion for food and standing by the smoker being out of the house.
