What meat ratio for sticks and summer???

I make almost all of my snack sticks and summer sausage from a combination of venison and pork but not having shot any deer last year I will need to start using beef. My question is should I use ground beef and pork or just all ground beef? If using all ground beef what ratio/grind would be recommended?? 70/30, 80/20, 90/10 etc??

I use 80/20 ground beef for both, but someone who eat's my stuff eats kosher.

When I use only beef I do a 80/20. I grind my own from Chuck typically. I have been looking at using beef clod. It's quite a bit less expensive here than Chuck.

If I was going to do a mix of lean beef and pork I'd shoot for 75/25 or 70/30.
