I make almost all of my snack sticks and summer sausage from a combination of venison and pork but not having shot any deer last year I will need to start using beef. My question is should I use ground beef and pork or just all ground beef? If using all ground beef what ratio/grind would be recommended?? 70/30, 80/20, 90/10 etc??
