Hello all from California.  I thought this Sunday i would do a Pork Butt for  Pulled Pork Sandwiches.  She came in a double boneless pack from Costco. So i wasn't paying attention to weight. I rubber her down on Friday for today's cook (Sunday)

Here are some pics to start us off.

  

Below you can see the start temp of the meat.


As you can see I am a big fan of Thermalworks.  one for the meat and the other to keep my temp where i want it.

I have both thermometers going in through the probe port with the air sensor sitting just inside of the probe port. so there is about a five to ten degree variance up top.


Oh, it is important that I tell you I am cooking on my 22.5 WSM using the Minion Method and water in the water pan.
