The prime rib smoke was for our New Years dinner and had been lost in the computer until now. It turned out extremely good and as with all prime ribs a favorite at this house.

This prime rib weighed in at 3.5 lbs without 2 bones. First a coating of Worcestershire and Soy sauce, simple rub of S&P and let it rest in the refrig overnight. Next day out of the frig and into the MES and using Pitmaster pellets in the AMNPS Took this to a final IT of 141 followed with a short rest before serving. Tender, juicy and full of flavor that is had to beat.

Had found these on sale before Thanksgiving for $7.99/lb. At home vacuum package and into the freezer for later use.


Ready for the rub down and seasoning


After overnight in the refrig and ready for the smoke+


Fresh out of the smoke for a short rest. Tented with AL foil


Sliced up and headed for the table.


Served with black eyed peas, cole slaw and of course baked potato, Au jus on the side

My Prime rib sure looks a lot like yours and it should since I have been using your method.

It works every time with ease and the results are great.

We have one left from Christmas sales, might have to see if the better "less smoked half" will let me throw it on the smoker. Thanks for sharing.
 
Looks beautiful, Larry.  Don't you just love the tender juiciness of that cut of meat when it's smoked?  I'm never going back to the oven for prime rib after the one I did on Christmas.
