I'm curing some bbb for the first time and I have some questions. They have been in the curing bags for the calculated amount of time and need to be rinsed and let dry for a day to get ready to smoke as per bearcarvers recipe. My issue is I won't have time to smoke till Thursday can I let them sit and dry for two days or should I let them sit in the cure for another day? Any help is appreciated guys

I would let them dry for 2 days.   Actually I do let my cured stuff dry for at least 2 days depending on what it is.

You can also leave it in the cure for a couple more days if you want or you can let it dry for a couple of days also then smoke it.

Ok I think I'll take it out and let it dry for a couple days. Didn't wanna ruin that much meat. Thanks

You'll be fine----Adam & Mark got you covered.

You can let them sit in the fridge those couple days, or in the cure in the fridge an extra couple days.

Just pulled my first run of the bbb out of the smoker and man it looks good and smells good! I used two butts so the tops will be the bacon and the bottom I'm doing the pulled ham for some sliders tonight which is finishing in the oven at the moment. I smoked it with a mix of hickory and alder. Gonna wrap up the bacon and slice tomorrow

Oh--OK---I didn't know which one you were doing. You did my Split-Butt smoke with Pulled Butt Ham & BBB on top.

I love that Smoke---Both turn out Awesome, and yours look just right too!!!
