Did my first Brisket this weekend

So I've been wanting to do a Brisket ever since I started smoking but I've always been intimidated. Well I finally got the courage and bought one and smoked it this past weekend and I was very pleased with the results. Since it was my first time I really didn't have high expectations. My brother and my cousin said it was the best Brisket they ever had. I was flattered that they said that and shocked that people liked it so much even though it was my first time smoking Brisket. It took a lot less time than I expected it to cook. It was a 13 pounder and it only took 7 hours (I pulled it at 200 degree int temp) at 225-240 degrees. I used four chunks of Hickory and one Maple and the meat had a nice, rich, smokey flavor. A couple things are worth noting. First, my Weber 18 Smokey Mountain performed flawlessly. It maintained an even 225-240 throughout the entire smoke. In fact, my cousin said he wants to get one after trying my Brisket. Second, buying a Prime cut of meat instead of choice or select made a huge difference. It pays to spend a little extra and get high quality meat. The Brisket was moist, tender and full of flavor. Third, wrapping it in foil halfway through the cook made it very moist and tender and probably had a lot to do with it being done so early. They say wrapping your meat in foil while cooking it makes it cook faster. Finally, when it was done I wrapped it in more aluminum foil and laid it in an ice chest and covered it with a towel and let it rest for three hours. I think this made a huge difference as well. Overall, I thoroughly enjoyed my experience and the results. If you haven't done a Brisket then just go ahead and do it!! It's not that difficult. Just as long as you cook at at a low temperature and have a little patience it will come out just fine.

I'm glad it came out well, my wife is wanting me to try one next. It looks like you trimmed a good bit of the fat cap off, I would think that would hinder it coming out juicy?
 
Looks good!  Around here, Costco prime packers are normally 2.79 a lb.  I just did one this past weekend.
