Since my NASCAR mailbox mod I plan to put my grease tray back in my Mes 40 Gen 1 foiled instead of just foiling the bottom of the smoker. I have never generated enough grease for it to pool and drain out the hole it was intended for before it vaporized into a crust. I am planning on not punching a hole in the foil and plugging the drain from the outside with a cork and regulating all airflow through the mailbox. As I mentioned in a few other posts I can't light a lighter and keep it lit next to the drain hole from all the air rushing into the smoker. A lot of air enters the smoker at the drain. Since air creates a drying effect I figured the less air leaks the better. This maybe insignificant but insulated cooking its what makes juicier food by requiring less fuel/air to get the same heat from an otherwise non insulated grill/smoker. Has anyone with a mailbox mod tried this?
