My name is Todd I burned up a wine barrel smoker now trying a 55 gal drum smoker living in Texas new to smoking and love it.

Going to remove parts from wine barrel and install in drum this weekend have seen posts that the drum does not need a door to add fire but after playing with the wine barrel for so long to properly go low heat I have found its easier to have a door than taking it apart maybe I am doing something wrong I like to smoke between 180 and 225. It took me 17 hours to smoke my Christmas turkey and it was very juicy was the best turkey I have had
