Smoked salmon pizzas. Easy!!

Hopefully this works since I'm still trying to figure things out.

So the wife is having to leave on an emergency trip out of the country tomorrow so I decided to try and make something for dinner that would help her remember where home is:)

I've been playing with the smokers a lot lately and have a good stockpile of bearcarver's famous hot smoked salmon as well as a pile of bbally's delicious lox, and I wanted to try something different so I decided to make pizzas. I combined ingredients from several online recipes and photos plus added my own tastes to come up with these two, which were a big hit with the whole family and only took about 30 minutes to make.

Besides the salmon I used
One thin crust and one regular crust Bobolli pizza crust, both 12".
Red onion ~1/4 cup fine chopped
Fresh dill ~3tbsp rough chopped and whole
Capers ~2tbsp
Caviar ~2tbsp
Thin skinned cucumber ~3/4cup thin sliced
1 container whipped cream cheese ~1-1 1/2 cup
1 small container sour cream ~1cup
1 lemon

First preheat the oven to 400 and when ready, bake the pizza crusts for 5-6 minutes. Once baked set aside to cool.

While baking/cooling the crusts make the sauce. For the sauce I combined the sour cream, cream cheese, juice from whole lemon, and about 2 tbsp rough chopped dill. I mixed until smoothly blended and set aside.

Also while baking/cooling I finely diced about 1/4 red onion.

Once the crusts are cool spread a nice even layer of sauce, then add the salmon and cucumber. Then add the onion, capers, caviar, and remaining dill to taste.

Slice and enjoy!!

Looks tasty!

When I was in college at the University of Oregon there was a pizza place called Pegasus pizza. They smoked their own salmon and had a smoked salmon pizza. Super tasty!
