I have been an amateur dehydrator and jerky maker. I currently own a Bradley smoker and a Cabela's dehydrator. I am looking to make beef/pepperoni sticks. I currently used Hi Mountains kits. Recently, I used two such kit and the end result was less than desirable. The finished product came out very bland, lacking a lot of flavor. The recipe was followed as directed. I also noted the meat did not appear all the way cured. The beef sticks were left dehydrating for nearly 8 hours with an average temperature of approximately 155-160 degrees.
I guess, I am looking for a little guidance, personal knowledge, or recipe ideas to better enhance my future attempts.
