New member in need of some assistance

Hello all,


I have been an amateur dehydrator and jerky maker.  I currently own a Bradley smoker and a Cabela's dehydrator.  I am looking to make beef/pepperoni sticks.  I currently used Hi Mountains kits.  Recently, I used two such kit and the end result was less than desirable.  The finished product came out very bland, lacking a lot of flavor.  The recipe was followed as directed.  I also noted the meat did not appear all the way cured.  The beef sticks were left dehydrating for nearly 8 hours with an average temperature of approximately 155-160 degrees. 


I guess, I am looking for a little guidance, personal knowledge, or recipe ideas to better enhance my future attempts.

Try out one of SQWIB's Jerky Recipes. Lots of flavor options there complete with instructions. Great place to start out and I can assure you, you will never touch a Hi-Mountain kit again!
