Howdy! I actually stumbled on this forum this morning as I was looking for some advice on beef jerky meat slicers, but I have been actively smoking meats for at least a few years now. It all started one father's day weekend when my wife said she would buy me Big Tex from Traeger and has been a triangle love affair between my wife and my smoker ever since. I consider myself an intermediate smoker as far as experience goes, I do not miss often. :) I hail from Albuquerque, NM with my wife and three kids. All of them love my smoked goods especially my oldest son Zach (12 yr) who I often have to ask him not to eat all the ribs so the rest of the family can eat.
I am looking forward to reading up on tips and some dry rub recipes to try out!!!
