Does anyone have a problem with the bottom rack of meat getting cooked to hard or fast when you have a full smoker? Is it as simple as rotating the racks top to bottom very so often? I made a bunch of ribs yesterday and everything was awesome except the ribs on the bottom rack turned into rib jerky.
 
Yeah it will do that I never use the bottom rack just because of that. Of cours I'm only cooking for 3. And if I'm doing sausage or bacon I just do two smokes. Have never rotated the racks before might work. If try it let use know how it worked out
 
Rotate if really full or a disposable Drip Pan on the bottom rack will deflect heat...JJ
