Smokers,



I have 3 racks of BBR I have dry rubbed 48 hrs earlier and sat them in the fridge.



Plan is to put in the smoker for 5 hrs at 220F, I will start mopping at 4 hrs, I am not planning on spraying or misting and I am not foiling.



Do any of you have opinions or see any mistakes, I may be making?



Any thoughts or input would be appreciated.

Start checking for doneness around hour four. Pick up the rack with tongs, about a third of the way in. If the rack bends 90 or almost 90 degrees you are done.

Great tip, I think I have a good smoke racks bent perfectly, one started separating so I am excited to try.
