Wow - Pretty much all I can say about this forum - Received a Masterbuilt 30 for Christmas and followed the excellent advice from many of you and here's my first try. I have to say - It is FANTASTIC. Still have a bit of work to do to get the right "crunch", but I'm not complaining (and neither is my family) about the inaugural roast.
Day before: RUB and Mustard
Morning of of: 0400, heated smoker, added chips, 225 temp
- Used Half beer/Half water in the water pan, hickory chips added every couple of hours and spritzed with apple cider occasionally (plus, I just had to have an excuse to open up and sniff a bit).
Afternoon: 195 degrees off the smoker and wrapped/rested for 30 minutes - Attached are my results:
