I would truly appreciate help with a recipe and cook process for smoked wings on a pellet smoker!
I've only just acquired my smoker and the wife wants me to smoke wings for our NYE party.
I keep finding really odd or not consistent info searching the Web.

I'm looking for fall off the bone tender with a little crisp if possible.

I'm preparing some "Roadside wings" for a potluck NYE party we are attending.  Just put the wings in to marinade.  I'll smoke them with apple wood tomorrow morning / afternoon, then oven reheat before heading over to the party.

Case, I hope you don't mind me using your recipe.  I did tweak it a little, reduced the vinegar to 1/2C, substitued 1/2C apple juice, added a squirt of lime juice and chopped serrano.
