Santa Wanted Some "Q"

So the household Santa`s Helpers went and got me a MES 30, Digital

Guess they decided Scrumptioulicious Ribs weren`t enough anymore and wanted some decent "Q" from other parts of the PIG, as well as any other critter meat that goes on sale.

That old Brinkmann Electric could put out some ribs, but everything else was hit and miss.

Just seasond and next day ran some clucker thighs through it and my ears are still ringing from the praise I got.

Next up is a porker butt.

Not sure if we`ll go for pulled or cook it a bit less for sliced.

This was so cool of my loved ones.

I do have a question.......

Just ordered an Amazin pellet smoker rig and would really appreciate someone telling me the best spot to stick it.

I like the Mailbox mod it is easy and it will allow you to cold smoke.

The best spot to place the AMNPS depends on which MES 30 you have: the Gen 1, 2, or 2.5. The interior design is a bit different with all of them.

You've just begun to find out how good Q coming out of your MES 30 will be! I've got the MES 30 Gen 1. The baby backs and St. Louis ribs I've pulled out of there has earned me the title "King of Ribs" from my favorite bro-in-law. My wife really loves the beef briskets I smoke as well.

I`ve looked at the mailbox mod and thought it just a great idea.

Cold or heat smoking.

Not sure if I`m ready to mod a brandy new toy yet.

Building a stand to get the bugger into a more user friendly height and plan on leaving a space for the mailbox when I`m ready to pull the trigger on a mod.

So far, I`m liking this more than my old Brinkmann Electric i a whole slew of ways.

That old electric Brinkmann could put out some tasty ribs pretty consistently, but everything else was a real crap shoot.

This MES is what I should have got when I got the smoke bug.

Hope to keep the family happy they got it for me with some tasty goodies.

Santa came a week earlier for me with a MES 30 digital. I did get an AMNPS, but got poor results with it inside the MES 30. There is not much room for it at the bottom left inside the smoker and the AMNPS is too close to the heating element. The result was the entire right two rows of pellets burned up very quickly from the heating element over smoking two racks of ribs on Christmas day. I've since added the mailbox mod to get the AMNPS out of the inside of the MES 30 for better control of the smoke.

I know I`ve seen posts from MES`ers who have licked any problems with either the pellets going out, or like your experience, the pellets going off really fast.

Gonna give their hints and tricks a spin before doing any mods.

Not saying I`m not gonna end up with doing the mod, but thought I`d hit a few bases before sliding into home.

Yes, lots of good tips and tricks on SMF. As with anything it just takes practice and experience to get it down. I did go through all the hints and tricks to get my AMNPS to work inside the MES 30 before I concluded the mailbox mod was the best way to go. The one tip I did not use for the AMNPS inside the MES 30 was to place it on the lower rack on the left. This should work, but I did not want to lose rack space, I could use for meat. Also in the lower left rack position you need to make sure you tent with foil to keep drippings out of the AMNPS.

Regarding the AMNPS, I did learn the most important thing to get it started is dry pellets and correctly starting it outside the smoker.
