Tried out a rib roast today in the new Masterbuilt 40.  I was more than pleased with the results.  Started with a 6 1/2 pound roast.  Just kept things simple as far as prep.  Rubbed it in oil then covered in Kosher Salt, Pepper, and a little Seasoned Salt.  Loaded up 1/2 of the AMNPS with Pitmasters Blend pellets, and kept the smoker right around 200 degrees.  (This new v.2.5 model is way more consistent than either of my V.1 models ever were)  Took about 4 1/2 hours to get the roast up to 118 degrees.  Then I took it out of the smoker and put it in the oven at 500 degrees for about 15 minutes to get a good crust on the outside.  While the roast was resting, I took the potatoes (Rolled in oil, salt & pepper) that I smoked along with it, and finished them in the oven at 400 for 45 minutes. I also used this time to make some packaged au jus, and added about a quarter cup of meat drippings to it.  All in all, a fantastic meal that we'll be eating for quite a few days! Sorry I didn't think to grab any pics while it was making it.  But here's one when it mattered...
