Pancetta Wrapped Pork Loin (Q/View)

Thread Starter

Decided to try something new this year.

I butterflied a Pork Loin Roast.

I made a spread of Pine Nuts, Garlic, Rosemary, Parsley, Parmigiano-Reggiano, Olive Oil, Salt, and Pepper.  I blended it in the food processor then spread on the Roast.  Then rolled it in some Pancetta.

I placed in the smoker with Black Cherry and Apple wood.  I will be finishing it in the oven at a high heat to crisp up the Pancetta.

Thanks for looking!  I will have more photo's once it is done.

I might have to try this, I have a couple loin chunks in the freezer. Great idea.

Here is the finished product. I also smoked some twice baked potatoes. They both turned out great. .
