  Even on on smaller loin like that, it's much better to stand it up and slice against the grain.  It makes it more tender.
 
Yeah - I cut two slices - I was having a heck of a time telling which way the grain ran. To be honest the flavor was terrible - too much hickory made it bitter creosote taste. Worst thing I have ever made...

You have to keep your smoke light. Some think thick heavy smoke is a good thing, but it isn't. So don't believe them!

A lot of hours of light smoke is Great, but even a short time of Thick smoke can be terrible!!!

I've pretty much switched to all cherry or 50/50 cherry pecan , or 50/50 cherry kiawe for beef. The flavors are great and not over powering.
 
Just an FYI, but there's a huge difference between "too much hickory" and "bitter creosote".    Creosote comes from dirty smoke or perhaps a grease fire.

Not all was wasted.  We put in crockpot and we were able to eat on sammies without the overwhelming smoke.

Live and learn - next one will be a beast!
