Sorry I missed it last night, Joop. I fell asleep on the couch after dinner...😑
Looks pretty tasty! Almost makes me wonder why you don't just stay with the drum..
Just kidding;I know why!

Doh, great looking PR, but you sliced it the wrong way:tongue:  Even on on smaller loin like that, it's much better to stand it up and slice against the grain.  It makes it more tender.

Yeah - I cut two slices - I was having a heck of a time telling which way the grain ran. To be honest the flavor was terrible - too much hickory made it bitter creosote taste. Worst thing I have ever made...

Hmmmm---I was typing my last comment while you were posting the above.

I'm sorry to hear that !!

You have to keep your smoke light. Some think thick heavy smoke is a good thing, but it isn't. So don't believe them!

A lot of hours of light smoke is Great, but even a short time of Thick smoke can be terrible!!!

I think my drum might have caught fire for a min on some old stuff on the bottom. It's my fault - should have planned on drum and I would have been better prepared.

That meal looks great, the meat color is perfect for me. You have a reason to burn some more charcoal now, breaking in the new kettle. Thanks for sharing

I've pretty much switched to all cherry or 50/50 cherry pecan , or 50/50 cherry kiawe for beef. The flavors are great and not over powering.

Just an FYI, but there's a huge difference between "too much hickory" and "bitter creosote".    Creosote comes from dirty smoke or perhaps a grease fire.

Wow sorry to hear that, Joop. My point still stands, since I would have kept it to myself 😏

Not all was wasted.  We put in crockpot and we were able to eat on sammies without the overwhelming smoke.

Live and learn - next one will be a beast!
