hello everyone Im Captin Richard. I live in ohio im a charter captain on lake erie. I smoke meat on the regular and looking to expand my smoking experiance. I use a vertical gas smoker similar to a masterbuilt. I smoke a lot of summer sausage, jerky and snack sticks low temp operation. I have mastered pork butts but need work on brisket and turkey breast.

Hey Capt. Richard.  Welcome to the site.  Do you smoke much fish?  Seems like that would be a natural for you considering your business.

I have never tried to do fish, I have ate it and im not much of a fan of it. but I do a lot of deer and pork.
