Doing a Rum injected Double Smoked Ham today and need some opinions. Should I use my trustee

stick burner or my new electric that everybody on this site insisted I buy over the Black Friday weekend (that is how I explained it to her majesty. My thinking is that the electric with the water pan will keep it moister. What are your thoughts ?

Use the electric. If it turns out great you can say "See! Aren't you glad that I got that electric smoker?"

I'd use the electric and an AMNPS, because it holds humidity in the box & won't make the outside bark hard like a smoker with a lot of air flow.

I would never put water in my MES water pan---It does nothing good---Only bad.

I'll be the devils advocate, use the trusty stick burner! I prefer to use my charcoal smokers to get the best smoke flavor. Just my preference.

Ended up using my longhorn gotta check my thermostats as it took about 45 min longer then what jeff said but man was it GOOD !!!!
