Hi all.  I am getting a smoker for Christmas, so I am here to learn the ropes.  My screen name relates to where I was born but I am living in South Carolina now.

Sorry for no pictures.  I prepared ribs and two chickens yesterday and started a 3-2-1 process with the ribs.  I now see why everyone gets a needle valve for the gas line.  I chased 240 degrees for six hours.  Chicken and ribs came out delicious, though I will change the rub a bit next time.
