HELP!!!Masterbuilt gen I is runnung 100 degrees off???

Im supposed to be smoking ribs for the Christmas party and my smoker readout says 275 and the maverick says 200 will they still get done???

They will get done, it will just take a little longer. I do mine at 225. How are you doing them? 3-2-1, no foiling , or what?

usually do 2-2-1 but not sure I want to open the door now.should I just leave them in?

I do my baby back ribs at 230-235 degrees for 3 hrs and then spray with water and foil them and put pack in for 1 1/2 hrs. I've tried spraying them with apple juice, but prefer the water better.

I never foil mine. I give st louis style ribs 5 hrs at 225. If you want to foil, give them 3 hrs in the smoke, then you can foil in the oven at 275 for 2 and unfoiled on a being sheet for 1.
