Doing brisket for Xmas. I'm having a hard time finding a brisket over 10 lbs to feed 8 people. Most places are selling 6-7lb briskets. Would I be better off picking up 2 of these to save on cook time rather then trying to find a 14 lber? This is my first time smoking brisket.
 
Sure.  Depending on the size of your smoker, it may be more feasible to do 2 smaller ones rather than a big one.  

If you can get 2 to fit on separate shelves, remember, they're going to get done at slightly different times.  When I do 2, I put the fat cap up on the top one and fat cap down on the bottom one.  My logic is that the bottom fat cap protects from my heat source (MES) and I don't care if the top one drips down on the bottom one.
 
Im in the same boat! I was out at Costco yesterday and not only were they all over trimmed but only 6-7 pounders. I on the other hand use an MES 30" so I couldn't fit one much bigger in there, so 2 separate ones on shelves above/below each other works just great.
