Born in Western N.C. Live in western N. C. Raised in middle Tennessee. Looking for seasoning recipes for real old fashionTennessee smoked meats. I'm working with a buddy of mine he has built a building where we process our hogs. We're playing with different seasonings. We made up 200+ lbs. of country sausage yesterday. Smoking in a smoke house. Not looking for recipes for city style meats. Just country style.
