TJ here from Fort Wayne, IN by way of NYC. I have some experience smoking meat on a modded cheapo vertical charcoal smoker.  Just moved over to a Masterbuilt Sportsman Elite gas smoker.  I did a couple of the basic mods including adding casters, lava rock and cast iron skillet.

Anyway, glad to be here.  I look forward to my future smokes.

Welcome to the board! Ft. Wayne, huh? I was there in 2005 for Spicefest. I helped man a BBQ booth - this guy was running an offset just for show, and doing his competition cooking on another rig.

If there were hickory cigarettes, it was like I smoked two packs.

The guy in the booth next to us was running a Big Green Egg, the only time I've watched one in use.

There was more, but that would be a complete thread hijack

Welcome from SC, TJ. This is a great site with lots of good folks who are always eager to share their ideas and tips. All you have to do is ask and keep on reading.

Good luck with your new toy and keep on smokin', Joe
