Cooked these up before going over to a friends house on Saturday. They went over very well and had a request for more wings for the same group of friends for New Years Eve. For variety sake since its less than a week away, I will try something different.
It was only the "second" smoke for my new
Masterbuilt Propane smoker. (Did some salmon earlier in the day). Its going to take a little practice getting the temp right on the new unit, but thanks to this site, I have made a few modifications that should help.
I also forgot how strong sesame oil is. Not saying it in a bad way, but next time will be careful about the amount I use.
I did two batches, one with the Sirachi, one without as there were some women and kids that I thought wouldn't appreciate the heat. When I first tossed in the Sirachi, it was HOT and I was afraid I hit it too hard. A minute later, I could barely taste it, so I hit it with some more. By the time I got to the party (10 minutes away), there was barely noticeable. Oh well. Again, they were still very tasty and I am definitely tossing it up to "Operator Rookieness" with the new smoker and new recipe.
