Sriracha in sausage

#2 son wants to add some sriracha to some snack sticks when we make sausage together in a couple of weeks.

We both love the stuff, but I have no clue how much to add to say a 5 pound batch.

Suggestions? Ideas? Alka seltzer?

Shoot I don't know. Is make a one pound batch of what you're going to make. Start with a tablespoon or two. Fry test. If not enough add some more.

When fry testing just use small amounts 1-2 tablespoons. That way you aren't loosing a bunch of meat.

That's the process I use when trying new spices.

I have a rough recipe put together. Gonna mix up 3 pounds and fry test. New thread later if it works out.
