Homebrewer and now sausage maker new to SMF

As the subject says I'm new here and am just starting getting into the hobby of sausage making. I've been brewing beer for a few years now and stumbled across a YouTube video where some homebrewers got off topic and did a show on making beef snack sticks. I decided to give it it a try. After a fairly bad attempt I stumbled across this site when looking for methods to make a better product for next time.

With that said I went hunting last weekend and now have a good amount of venison at my disposal. I am hoping to make some decent summer sausage but am a little nervous because the last batch of "snack sticks" weren't that great. They were edible but nothing to be proud of.

I have a cheap Brinkmann Gourmet electric smoker that I modified by adding a PID temperature controller and solid state relay. It gives me great control over temps. I also just ordered an amazen pellet smoker so I should be able to keep a consistent smoke no matter how hot or cool the element is.

My dad has a fairly decent meat grinder and I plan on using my buddies new vertical stuffer.

I'm pretty excited about this new hobby, I just hope my second attempt turns out better than the first.

Welcome to SMF waverz and were glad to have you aboard. You've come to the right place. Looks like your off to a great start having a grinder and a vertical stuffer.
