Hi smokers. This journey started when I pulled an old Smoke Hollow gas smoker out of storage...hardly ever used before... and tried my hand at spare ribs. Worked so well I decided to get me an MES 40" and go from there. My niece got lucky and got the gas smoker. She's a good cook and took to it right away. Anyway I live in north Texas most of the year but go back to the Gold Coast in Australia for several months each year.Gonna miss my smoker when I'm back there but my son in Sydney has an MES 30" so might borrow that. Right now I have baby backs and spare ribs in the smoker. Trying out the 3-2-1 method. Will see how that goes.
 
Welcome to SMF Smokincotto!  Glad you are here and having fun smoking protein.  I don't envy you that long flight back home or returning to Texas but with BBQ waiting on both ends it would be tolerable.
