The Boss is down at her moms for the night so I had to get a little meat sweat going tonight

3 # lb roast heavily coated with pepper garlic and cayenne

I just got a shipment in from WICKERS  (incredible sauce and marinade) so I injected with a good amount of marinade

took it up to 140 then pulled it, wrapped in aluminum foil and a towel and let it sit for a couple hours while I hung christmas lights outside

smoked a potato and made some bernaise sause.   life is good!

meat is pulled and wrapped time to sit for a couple hours


My potatoe is ready, butter garlic pepper and cheddar


thats a tasty looking piece of meat  getting some meat sweats going already


my trusty helper  always ready for action


sliced up  would have liked a little more rare, next time i will pull at 130

Next time, call me, I'll help with the lights, as long as you're cooking!  That looks good!

Love the helper!  I'll bet he sprung into action when the aroma hit!
