Nice setup! How are controlling the airflow in the mailbox? Just opening the door? I going to make a batch of andouille as soon as I get an answer to my question. My AMNPS 5 x 8 works great in the charcoal side of my char-griller 5050. I set it right in front of the draft contol on top of the charcoal grate. Then I can adjust the airflow in and there's a draft control on the stack too. I have smoked tons of cheese this way and I did one batch of bacon this way then finished it in the oven to 152F. Keep me posted on how your setup is working.

I have a few holes drilled in the bottom. I think covering a few will cut back enough air so the pellets don't burn so hot.
 
 
Thanks, yes a needle valve would work on the propane side to control temps but not with the amazen 5x8 smoker.There's just not enough oxygen to keep the pellets going. I'm smoking on the charcoal side of this smoker. My question was: can I smoke sausage at the temps I can achieve (100 - 110F) with my current setup? Then finish in the oven to an internal temp of 152F?

As long as you're using a cure, you can smoke at the temps you have, and then finish in the oven.  No problem.

I'll check into the AMNTS tube smoker. I have no problem buying one if it will get the job done. I tried my AMNPS 5x8 in the propane side with a variable speed aquarium pump supplying air to the AMNPS via silicon tubing and it still wouldn't produce enough smoke. Maybe the AMNTS will work better.

I just tested my mailbox setup yesterday, Dale, and the 6" tube works great (maybe a little too much smoke, actually. I may play with airflow).
I should get delivery today of a 1000watt hot plate.We'll see!
I, too, am interested in the Anduille.

Dan, morning.... the hotplate you receive, will have an over temp snap switch in it... that keep the element from melting any housing parts... I put one in my fish smoker... had to strip it down... works great...

Thanks for the link, Dave! I'm trying to use my regular smoker "on the side", so I don't want to modify it that much. I'm assuming the safety switch is to keep the plastic housing from melting. I'll try it intact at the very bottom and see what happens and how high the temps actually get.

but I wasted my time taking advantage of the warm weather

It's supposed to rain for for the next few days, but hopefully I'll get a chance to play around with it!
