New to the site - New smoker being being built

Hey all I am Darrell from S.W. Missouri. Been smoking for about 20 years. Built my first offset smoker back when I first started smoking and have smoked a lot meat on it. I have dreamed of building a monster vertical reverse flow smoker for years and I have been designing what I want for years. Now my buddy and I are opening up a restaurant and my smoker build dream is coming true.

I am sure there will be a lot of criticism but below is some pictures of the build so far. It has two fire boxes for different kinds of woods and it will have another smoke box on the left just like the right. It will also have 2 boxes on top of the fire boxes. Each box will have sliding meat shelves top to bottom. The bottom of the boxes are built in 4" deep water pans with drains.

Tell me what you all think.

Hi Hogeye, can not see why no one has replied, so I will welcome you to the Forum. Your build looks great, hope their is a lot of hungry folks near you as that a Huge Smoker!!! 👍🇬🇧

Wow, that is a monster! Its looking great! Welcome to the Forum, sorry this hasn't got a lot of attention, normally people are all over these! -Anyone... suggestions or compliments for our new friend?

You may also want to post your build info/pics under: Smoking Supplies & Equipment › Smoker Builds, and you may get a lot more attention for the build there rather than the roll call (since that is the purpose of that thread).

 

That is a very ambitious project! Whereabouts do you live/ what kind of establishment will you be opening (obviously smoked meat, but what else).
