Trying a beef brisket again

I'm smoking another brisket again on Tuesday my first one looked and smelled great but it was a little chewy. I'm looking for advice on what I did wrong. It was a 8 pound brisket it cooked for 61/2 hrs at 225-250. I pulled it at the temp of 160 a and let it rest for 30 mins. Any help and advice would be helpful thanks

I think you want to cook it to around 190 IT start probing it with a thermometer it should go in with little resistance. Are you cooking a flat or whole packer? Maybe use the search feature and read about some cooks many very experienced smokers have some great posts. Brisket is a tough meat and is a challenge to cook but you can do it time don't rush as it needs time to cook and become tender. Also a great way to rest is wrapped in foil then a dry towel into a dry cooler for an hour or a little longer if you can wait.
