I've been thinking about doing this for a couple of years and finally decided to pull the trigger after finishing a good year of hunting. I live in Wisconsin and have been using a 1hp grinder and a dehydrator but wanted to up my game into the world of smoking. I'll be looking at doing a lot of snack sticks and breakfast sausage, initially, but am definitely looking at getting into more skilled items as time goes on.
