It's been racing over the entire 4 day weekend.  Thanksgiving is over. The family is out of the house.  So I was looking for something to do. I found a package of forgotten wing segments in the bottom of the freezer.  I always wanted to try cured hot wings.  So I start gathering all my stuff! 

I made 2 gallons of Pops cure brine but lowered the salt to 1/3 cup per gallon and substituted Splenda for the sugar. ( Low carbs),  I soaked the wings for 24 hours. 


After 24 hours I gave the wings a good rinse.


And now I'll give them a soak for about 2 hours in Franks Wing Sauce.

Here is the New Oval Smoker Tube by A-Maze-N. When you first take it out of the box you'll notice how heavy and well built the unit is.  Like all of Todd's products it is built to last. It's oval shape prevents the tube from rolling round in you smoker. 



The second thing you'll notice is that its length is adjustable.  Fully extended this thing is going to burn forever.



The wings are still taking a soak in Franks Wing sauce.  I'll be back shortly to light this thing up! b 
 
I like where this is going! Looks like a smaller smoker might work on this but we will wait and see where they end up!:cheers:
 
I'm in,,   I want to know how the Splenda worked as for as any taste ?   (Probably can't taste it after soaking in Frank's   (I love that stuff)

My new tube isn't shiny anymore, it already had about 5 pounds of pellets ran through it! I love this thing! My other tubes are jealous!

LOL... Hey did you notice the photo of me placing the tube into the smoker?  That bright orange thing is called a glove.  You should try using them Crank!  Much easier on your hands..  LOL

Howdy Gary.  I use it when curing corned beef.  Worked out pretty good. 
 
I need to cut back on sugar and salt both, just wondering how the final taste was, I know when sweetening tea I get a little after taste, but that may just be me ?

Well... I'd say they turned out pretty good.  The kids came by with the grand babies and snarffed up most of them.  My daughter said that they tasted like the turkey legs at Disney World.  LOL I guess that a pretty good complement.  (shrugging shoulders )  Topped with a bit of Parmesan cheese. 


Sweet and spicy. With a hint of hammy from the cure which I like.  I'll do these again.
