I have used charcoal and wood when I smoked (for over 20 years), this year I stepped up to a 40" Masterbuilt Electric Smoker and am having trouble as I am not used to smoking at a constant temp over 180 deg. I did a 14 lb turkey yesterday and it was bit dry.  Does any one using and electric smoker have any pointers?
