How Dry Can I Somke Fish?

Hello,

 

I was wondering if it is possible to smoke fish until it is dry (kind of like a jerky) such that it can be vacuum sealed and kept indefinitely outside of a refridgerator.  Also, if this is possible, how tough would it be at this level of dryness?  Im not too concerned about dryness because my intended purpose would be for outdoor use while backpacking and such where you dont have much else to do while walking except gnaw on a dry piece of meat, but Im not looking to make hard tack.

 

I think I remember eating something like this that a family friend gave me but it was a number of years ago so I dont remember the exact details, but I do remember it being really good.

I make fish jerky all the time. It's extremely popular in Hawaii as a snack. Search here for my fish trifecta post. I did a batch of rockfish jerky in that thread.

And it can be vacuum sealed and stored on the shelf?

 

What kind of shelf life does it have?

What I make needs to be stored bac packed and frozen or used in a week. The stuff in the freezer lasts a longtime.
