Happy Turkey Day.

I'm from Northern Calif., Anderson Valley specifically. Weather allows me to grill just about every day of the year.

I got introduced to your forum by what looks like an excellent recipe for the spadgecocked smoked turkey from the fellow in Texas.

I will know for sure in a few hours.

I have been smoking fish/meats for 20 years on everything from tiny electric coil smokers to Brinkman style gas and charcoal units. I am real interested in homemade smokers for cold smoking.

I am real blessed to have a GREAT supplier of charcoal and wood for BBQ and smoke close to me in Brisbane, CA named Lazzari. Anybody need more info check out their website, although it doesn't tell the whole story...i.e.,they have Peach wood chunks as well as many other what I would call exotic woods for smoking.
 
Welcome to the board! Wow it sounds like you have a lot of choices.

Right now I have an offset with cherry lump, and split chicken breasts a little past half-done.
