Flame blows out

Built a smoker a few years ago that works pretty good. The problem I'm having is that when I want to smoke at lower that 275 degrees the flame wants to blow out with just a small breeze. The burner is 160,000 BTU's. The cabinet has 3" of insulation and 2" in the doors. Even with the dampers wide open it hard to get the temp lower. I will include some pics of the setup. Any suggestions? Also, can anyone tell me what parts I would need to turn this into a "set it and forget it" smoker? Controllers, PID, valves, etc.
