Smoking a turkey

So I have a turkey to smoke tonight, 12lb bird. I am spattlecocking it, and going to smoke at 225 on my treager.

 

I heard that check the thigh for temp and when hits 160 pull it and let rest. I suppose I should check a breast also to make sure its at 160.

 

Where do you guys check temps and what temp do you use?

The "safe" temp is 165 in the breast. Most people will go to 160 in the breast then pull it and tent it in foil and let the temp carry over to 165. 160 in the thigh is not done enough.

Look for 175 in the Thigh near but not against the bone...JJ

I got 170 in thigh and only 140 in Breast so not sure why

Hold steady until you get 165 at the breast. Then let you bid rest with a bit of foil over the top for about 30 minutes.

Yep...A little higher IT in the thigh will not hurt. Lots of guys like 180+ in the thigh...JJ
