As for the ribs, I would love to get a rack too but the singles are all we get around here.Wonderful, Disco! Gotta try that glase. SWMBO has tried to convince me that smoking season is over, but now I can point to you and say "See?!".
Whole racks of short ribs are a chore to get here, but the cut ones are readily available, and after doing a full rack once I think the cut ones would be just as good, especially after seeing yours! Heck of a ring for 3 hrs smoke!

Love short ribs and those look tasty. Nice job on the sauce/glaze. It's very similar to a recipe I use to make Korean spares. Mine uses a little Thai chili paste as well.
