This is Bret from Tomah, WI. I'm pretty new to smoking. After using a cheap store bought smoker that didn't hold heat in the cold for a few years, I built my own.
I used my Grandpa's old 30 gallon air compressor and it went really well. I have one question you guys could help with, so I'll describe the smoker as well as I can.
30 gallon vertical smoker
3 1/2" diameter x 3" exhaust stack offset about 3" from side on top of lid with sliding plate to adjust hole
3 1/2" diameter x 6" intake pipe welded to center of the bottom with sliding plate to adjust hole
I need some help with my intake. The pipe sticks about 4" into the smoker, capped, and has 8-10 3/4" holes drilled around the top 1 1/2" of the pipe. The thought was to keep the holes above the ash. The bottom of the pipe is open to the outside with a plate that I can adjust to open or close the hole. I can't seem to get enough air intake with this setup. Do I need to put the intake on the side instead of dead center bottom? How about a little fan to force air into the pipe? Any suggestions will be appreciated.
