First time smoking chicken

I had the day off today and decided to put some thighs in the smoker.  I put them in a brine (1 gal water, 1/8 cup salt, 2/3 cup brown sugar) for about 4 hours prior.   Took them out of the brine, pat dried them, rubbed some EVOO on them, then put a light amount of natures seasoning and cayenne on top.  I turned the smoker up to about 250 deg and fired up the AMNPS with some apple wood pellets.  Did a roughly two hour smoke then finished with a little BBQ sauce (the kids love it) on the grill.  They came out of the smoker fairly crisped up which surprised me, and the finish product was awesome!  I made some twice baked potatoes and cooked down some string beans in the cast iron pan.  I'm officially hooked on using the smoker. My wife was impressed and my kiddos devoured them.   Looking forward to smoking something on my next days off!

I forgot to add that the temp outside was 5 deg F when I started, down to 0 when I finished and the smoker held its heat very well.

Those look good to me, and at those temperatures, you are truly a die hard smoker!

Stay warm up there!

I can't go all winter without the grill.  Now having a smoker (only been two weeks or so) I'll be cooking outside even more.  The blue tooth on the smoker and the remote thermometer is KEY! :icon_biggrin:

I'm the same way. Unless it's raining really heavy, I'm smoking. Doesn't get nearly as cold here in Texas, but even in chilly weather, smoke is rolling.
